This testimonial is from a customer who owns a brewpub in Cedar Rapids , Iowa , USA . Their brewer quit suddenly and they needed on site training and recipe documentation done quickly. In five long days, I helped them brew, trained two key staff and updated and documented their key recipes and procedures: “We had someone in house that was very interested in the position but had no experience in working with the equipment or brewing. Fortunately for us I had stayed in communications with Newlands about our situation and they put me in contact with Mr. Mark Simpson. I can pretty much sum up this experience in a few words, “Best investment we made since purchasing the pub.” With just a few conversations between Mark and I he was able to design a thorough business plan that would help train our new brewer and myself along with short term and long term goals for the brew pub. In all my years of working with such great restaurant people I have never meet anyone who was able to take such technical data and put in such simple to understand form. His knowledge and passion for the brewing industry made him a joy to work with. Mark is a true professional in his craft. Marks ability to observe and adapted to whatever environment he finds himself in is probably his strongest attribute. Within five days he had us up and brewing again.
Since Mark has left we have brewed nine patches and the compliments from our guests on the quality and flavor of our brews still continue. I would strongly recommend his services whether it is short or long term. His advice and insight into your brewery will be well worth the investment both in the quality of product and your bottom line."

This testimonial is from a multi site brew pub customer I helped with a process audit and recommendations for expanding production. They shaved considerable time from their brew days, improved the quality of their beer and became more efficient after implementing several of my key recommendations.
Sometimes it’s best to have someone outside your brewery lend a new outlook on your tried and true processes.
While planning for an expansion to double our brewery production capacity we began looking for whatever process improvements we could make to produce more beer without having to invest in twice as much equipment. Mark was recommended to us by our brewery manufacturer (Newlands) as someone with the skill set and knowledge to completely evaluate our brewery from silo to keg and help plan for our expansion. There’s always numerous ways to approach a process and it seems Mark knows them all!
Not only was Mark able to assist us with tweaking our brewhouse, cellar and packaging procedures he also was able to document all of these areas for us and assist in developing SOP’s for many areas where it is critical to remain consistent while we grow. His ability and willingness to jump in and be hands on while being very considerate of our brewer’s knowledge and procedures made for an extremely productive visit.
In the few months since Mark’s visit we are already starting to see the results of his recommendations – shorter brew lengths, improved filtering runs, yields and carbonation and most importantly improved overall beer quality and stability. Mark’s background in both the brewery and lab is invaluable and available on a continuing basis and his industry contacts are some of the best. I would recommend that any start-up or rapidly growing brewery seek out his services – he truly can offer one-stop solutions to anything from equipment to production to marketing and sales.
